A ranked guide to the best pizza I’ve found in New York.
New York is the benchmark: the strongest and most competitive pizza market. Its baseline standard is unusually high. Some say it’s due to the water. Those people are wrong. It’s because New York has a fiercely competitive pizza scene and customers who demand quality. A good New York slice should be thin, foldable, crisp, chewy, and balanced, with bright sauce and enough cheese to bind everything without taking over. Bellucci’s, Cello’s, Di Fara, Scarr’s, and L’Industrie all offer versions of that ideal. I am especially interested in newer shops that improve the classic form without turning it into something else. Fini is a good example: recognizable New York pizza, just with better fermentation, baking, and balance. No other city has the same density, variety, or number of places worth using as a reference point.
