Cello’s Pizzeria (East Village) - This slice was pretty close to perfect. @cellosnyc produces exactly what you want from a classic NY slice shop, done with great craft and precision.

The super thin leopard-spotted crust achieves an ideal balance between crisp texture and well-developed char. The high-quality (I can’t tell you what brand, but it’s not Hormel’s) cupped pepperoni gives a burst of genuine flavor complexity beyond just fat & salt without weighing down the slice. The crust is well charred, with smoky notes without unwanted bitterness. When folded, the slice maintains form without collapsing - along with the flavor, testament to thoughtful construction.

What impresses most is the restraint. Everything is done thoughtfully. Nothing feels excessive or performative. This is pizza craftsmanship at a high level, executed with both skill and respect for tradition. @cellosnyc is highly recommended.
