Ace’s Pizza

A vintage aesthetic pizzeria in Williamburg, Brooklyn that turns out some outstanding Detroit-Style Pizza. We all recall the Neapolitan boom of 2008 & Hot Honey mania in 2017, but in 2023 every city seems to be experiencing the Detroit Renaissance. With all the bad stuff on the news, it’s easy to forget what a great time it is to be alive as this ‘Golden Age of Pizza’ keeps shining brighter!
Ace’s has the feel of an early 90s pizzeria, with wood-paneled walls, old posters, a painting by Catherine Scorsese, and a pretty good bourbon selection for Brooklyn. When we visited, they were playing an episode of Hulk Hogan’s 1994 show ‘Thunder in Paradise’ on VHS (this episode featured a cameo by 8 foot Argentine wrestler ‘Giant Gonzalez’). We watched some of it with the owner, while sharing a drink and discussing brick cheese. I’ve been trying a lot of Detroit style places lately (including a trip a few months ago to Detroit), so I feel pretty confident saying Ace’s is one of the best. With caramelized cheese on the edges & seeping into the dough, the crust was an incredibly flavorful without being greasy. It was crisp and slightly charred on the outside but soft, fluffy, with a bit of buttery flavor on the inside (which is comes from the melt of the aforementioned Wisconsin brick cheese). The interior was a bit lighter than in looks & not at all soggy. Truly a perfect execution of the style!
