9.1/10 Fermento (West Village) Yesterday, I found myself in Lower Manhattan for the Knicks Championship Parade (it was a lot of fun). The streets were filled with would-be Lees & Turturros from the outermost boroughs, all dressed in blue and orange and engaged in various acts of Dionysian revelry. After some reveling, I thought I’d treat myself to a slice.

Fermento fits neatly into the current wave of elevated slice shops: places using long fermentation (it’s in the name), better flour, and precise baking techniques to improve the New York slice without abandoning its basic form. In that sense, it sits close to @lindustriebk, @diamondslice_, @cellosnyc, and @jonnyspizzanyc, some of my absolute favorites.

To get a full sense of the place, I tried both a New York slice and a Sicilian. The pepperoni slice was very thin, crisp, and light, with a respectably charred undercarriage. The dough, fermented for 72 hours, had more character than the average slice, while the spicy cupping pepperoni, fresh basil, and grated cheese provided plenty of well-balanced flavor. A nicely crafted slice.

The Sicilian was even better. An airy interior and crisp bottom showcased the dough particularly well, while the spicy pepperoni and generous cheese coverage made for a rich but disciplined slice. For me, it was the best expression of what @fermentonyc is trying to do.

Overall, @fermentonyc is a very strong modern slice shop. Dough-forward, crisp, and executed with precision. Recommended for your next #KnicksParade
