It’s #NewYorkPizzaMonth here, so today we’re featuring this Soho (Spring Street) institution. The classic New York style slices here are quite good, but I’d skip past them for what they call the “Palermo slice” but I’d call Sicilian *Sfincione*. Sfincione is the *true Sicilian pizza slice*, a crisp pan slice topped with sauce and bread crumbs - You may be skeptical, but it’s a delicious combination.

When exactly sfincione emerged in Sicily is mysterious - how does one determine who was the first to put red sauce & toppings on bread? However, it became popular there by the first half of the 19th century and is the ancestor of all the American square styles (Sicilian, Grandma, Detroit, etc). Those American styles were made possible when Sicilian sfincione met America's plentiful cheese supply - A form of multicultural innovation that can make us proud. 🇮🇹🇺🇸🧀
