Mama’s Too

Long an Upper West Side pilgrimage site, Sicilian slice specialists Mama’s Too now have a shop on Bleecker in the West Village. Often mispronounced “Mama Too’s,” the pizzeria is a descendent of Mama’s Pizza, and I first learned about it from the elite pizza connoisseur @itspizzanight.

I was tempted by the pepperoni, but went instead with the Cacio e Pepe. By appearance it looks like a real gut-buster, but it eats lighter than expected. The crust is crisp with a well-fried bottom that gives it structure - it stands straight out when held. The cheese is buttery and molten - despite dripping off the sides it dies not overwhelm the dough. The balance of salt, pepper, and quality crust made for a very tasty slice - It’s indulgence disciplined by great technique. I call that craft - Very well done @mamas_too.
