Chicago’s deep-dish tradition is really a family of related pan pizzas. It includes classic deep dish (Uno’s), stuffed pizza (Giordano’s), and the caramelized-edge pan style that bears some resemblance to Detroit style (Burt’s Place and Pequod’s). Classic deep dish is built in a high-sided pan with a rich, crisp crust, cheese and toppings underneath, and tomato sauce on top. Stuffed pizza takes the idea even further by adding a second layer of dough beneath the sauce. All three treat pizza less as a thin platform for toppings and more as a substantial construction built around the pan. At its best, the crust should be flavorful and almost biscuit-like, often enriched with butter or lard. Done correctly, this is not simply ordinary pizza made thicker, nor is it a cheese casserole: the crust should remain crisp and sturdy rather than soggy or leaden, with enough acidity from the tomatoes to balance the considerable quantities of cheese, dough, and toppings, especially Chicago’s fennel-heavy sausage.
