Two Cities Pizza Co

The Masons, who it is said used secret knowledge to construct wonders like the Great Pyramid & Solomon’s Temple, turned their attention to constructing the perfect pizza (pie-ramid?) in 2015 opening Two Cities Pizza Co. This Mason Ohio pizzeria features Chicago deep dish and “New York thin crust” (thus the *two cities*). Additionally, using building techniques that may well have been passed on by the Knights Templar, the pizzeria features a bathroom that looks like a subway car - how fun! With such amenities, Two Cities is a favorite of Masons and West Chesterians alike (or is it ‘Westerns Chester’ kinda like ‘Attorneys General’?).
I tried both styles at Two Cities, but I’ll limit today’s review to Chicagoland. Honestly, I thought this was one of the best deep dishes in Cincinnati. The ideal Chicago deep dish should have a thick flakey biscuit-like crust (usually using cornmeal and butter or lard). That makes for a very flavorful crust, that you can eat on its own (see @loumalnatis @labriolachicago @bartolispizza). A lot of places outside Chicago do deep dish, but with essentially normal doughy pizza crust or even pretzel-like crust (see @bourbonhousepizza). That can be quite good, but it’s not exactly Chicago style. @twocitiespizza_oh has a true biscuit-like crust with a nice buttery flavor. It’s a bit thinner than typical, so you get a high toppings to crust ratio. Also, it’s a bit on the saltier end, but that’s common at family friendly places (kids tend to be big salt fans). Overall, Two Cities is a quality well-constructed pizza experience. 🧱🧱🧱
