Wildfire Pizza Kitchen

A pizza truck that frequently pops up around downtown and various breweries/cideries, Wildfire produces 12” wood fired pies. The dough is cold fermented for at least 24 hours and then cooked (quickly) at 900 degrees or so. As a result, their crust has a crisp lightly spotted exterior and chewy interior. Flavorrful, but more chewy than airy, I’d venture that the crust tends a bit more towards New York style rather than Neapolitan. Regardless, it’s got a great flavor. @wildfirepizzakitchen’s pepperoni pizza, pictured here, was well-balanced with quality ingredients. Overall, definitely a quality pizza that is worth your time.
