Liberty Kitchen (Fishtown, Philadelphia) - I love places that take a classic style and work to perfect it. @libertykitchenphl does that with the storied Philly “tomato pie” slice.

Yesterday, I reviewed an old-school tomato pie from @caciasbakeryphilly in South Philly. Liberty Kitchen is working in the same bakery-pizza tradition, but this felt like a more precise version of the form in the curated postindustrial neighborhood of Fishtown.

To begin with the banal observation: this slice was very tomato-y. The sauce was thick, slightly sweet, deeply savory, and hit hard with herbs. The crust is substantial, but lighter than it looks: airy, well-fermented, and strong enough to stay crisp under all that sauce.

But what makes the slice really work is the contrast. Each bite gives you soft interior, crisp bottom, savory tomato, dried herbs, and a little oil. A simple slice, done excellently. If you find yourself in need of a tomato pie slice, Liberty Kitchen is highly recommended.
