What defines this list

Philadelphia pizza often feels like a firmer, more aggressively baked version of New York pizza. Shackamaxon and Angelo’s are thin and familiar in shape, but the crust is darker, drier, and crunchier, with less sag. That gives the city’s pizza its own character. The other major tradition is tomato pie. Cacia’s represents the old bakery version: soft bread, thick, herb-heavy sauce, and a room-temperature slice built more around tradition than crispness. Liberty Kitchen refines that form with better fermentation, a lighter crumb, and enough structure to stay crisp under the sauce. I’ve only scratched the surface in Philadelphia, but the ceiling is very high. The best places take local tradition seriously without using it as an excuse for mediocre execution.
