What defines this list

The common thread in New Jersey pizza is that it stays close to New York but is usually sturdier, a little thicker, sweeter, and more sauce-forward. Trenton tomato pie makes that clearest by putting the sauce over the cheese. Grandma and Sicilian slices carry the same approach into pan pizza, with more oil, crisp edges, and airy interiors. De Lorenzo’s, Naples, and the better Maruca’s slices show what Jersey pizza does well: strong crunch, minimal sag, good olive-oil flavor, and enough structure to hold a generous amount of sauce and cheese. The best Jersey pizza feels old-school and distinctly local.
