Whether it’s maturity transformation, risk free asset creation, or just plain old fashioned liquidity supply, America (and indeed the world) loves banks. So it peaked my *interest* when this pizzeria opened in Mt Lookout Square and thought I might invest in a slice (well, I actually withdrew a whole pie). As you might say about any pizza bank: it’s all about the dough. At @thepizzabank_mtlookout, the crust was lightly charred and showed the bottom marks of being baked on a screen. Screens can be a risky proposition. To me, this crust was denser than average and quite chewy (perhaps too chewy). A bit thinner than a New York slice (“hand-tossed”?), the crust served structurally to hold up the toppings. Fortunately I hedged my bet with my topping selection and here the abundant thin-cut pepperoni provided outsized returns. It’s a fine slice to grab after wobbling out of @mtlookouttavern or @millions_cafe on a Saturday night - a much better choice than say Dominos with more competitive dough-posit rates.
