Grabowski’s Pizza

This is a pizzeria I had long had on my list to try after discovering them on Instagram (@grabowskis_pizzeria). Grabowski’s is a Denver pizzeria that serves a Chicago thin crust style. Overshadowed by casserole-esque deep dish pies, Chicago thin crust is one of my favorite pizza styles. The crust is rolled cracker thin so that it is quite crispy (it’s not a foldable slice) and it is always cut into small squares. Traditionally, it is a red-sauce pizza, with generous helpings of mozzarella and fennel (classically), making for delicious (oversized) bite-sized slices. As a Chicago-forward pizzeria, Grabowski’s has the option to pair your pizza with a “Chicago Handshake” (An Old Style beer & a shot of Malort). Keeping with the Chicago theme, we opted for a sausage pizza which was appropriately delicious and an outstanding example of this style.

A warning though: Analogous to Proust’s madeleine cookie, a bite in a Grabowski sausage pie might transport you back in remembrance of pizzas past to those days of wine & roses in Cicero, Illinois… perhaps even at the legendary @vito_and_nicks, whose style it evokes for me.
