Angelo’s Pizzeria (South Philadelphia) - America turned 250 Saturday. After paying my respects at Independence Hall, there seemed to be only one appropriate way to celebrate: standing in a South Philly pizza line. Fortunately, at @angelos_pizzeria_south_philly the “line culture” is justified by the actual pizza. And it moved fast. I waited about 10–15 minutes to order, took a 20-minute lap through the Italian Market (eyed some bakery slices & stared down Frank Rizzo), then returned just as my pie came out of the oven.

As a destination pizzeria, Angelo’s attracts a diverse crowd. I chatted with French World Cup fans in line, shared a stoop with a corgi wearing sunglasses, and met a neighborhood guy who told me he watches pizza reviews from a gambling app. They all know good pizza.

You might say the pizza itself leans toward New York by way of Philadelphia. The slice is sturdy with little to no sag thanks to an evenly browned, dry undercarriage - more aggressively baked than the average New York slice. It gives a slight crunch when folded. The cheese is generous but never heavy, blistering into caramelized patches while the bright tomato sauce has a nice balanced flavor. Overall, it’s a well crafted, highly satisfying cheese pizza: crisp bottom, abundant cheese, and an assertive bake. Everything in balance.

At our Republic’s 250th anniversary, there’s lots to celebrate: America has MoMA, the Talking Heads, Texas, Navajo weaving, the Ivy League, the world’s best barbecue sauce (and more!). …And of course, the world’s most innovative chefs and its best pizza. It’s been two hundred and fifty years and we’re still forming more perfect pies.
