What defines this list
I seriously enjoy making fun of Boston pizza. Too many old North End shops seem to rely on atmosphere and nostalgia while serving pale, soft, cheese-heavy slices. Galleria Umberto is cheap, historic, and worth experiencing, but the pizza itself is fairly basic and white-bready. Boston gets more interesting when it leans into New England styles instead of trying to imitate New York. Brewer’s Fork makes an excellent wood-fired clam pie. Hot Box does a strong South Shore bar pizza, a style that deserves more attention. June Bug shows real fermentation skill, though my pie still needed a little more time in the oven. Boston can produce very good pizza. It is just scattered, and the everyday standard is lower than in New York, Chicago, or even Cincinnati.
