Sfincione is Palermo’s traditional thick, soft, breadlike pizza. Classic versions are topped with combinations of tomato, onion, anchovy, herbs, aged cheese, and breadcrumbs rather than a heavy blanket of melted mozzarella. The crumb should be tender and flavorful, with the toppings absorbed partly into the bread. It is rustic, aromatic, and fundamentally different from the American square pizzas it helped inspire.
