For a recent party, I was tasked with ordering the pizza - my comparative advantage. In the execution of these sacred duties, I noticed that @eattaglio offers a Triple(!) Pepperoni and Hot Honey pizza. I felt I had a mandate to order one.

Pepperoni and hot honey are becoming a modern classic. Here, the surface is almost completely buried beneath thin, cupping pepperoni (not the thick-cut variety). The layering creates unexpected nuance in both texture and flavor: some pieces remain meaty and chewy, while others fry more into crisp chips. The honey adds sweetness without overwhelming the pizza.

Clearly delicious. But what makes this a great pizza is the crust. Detroit style depends on contrast: a deeply browned, almost fried underside surrounding a soft, airy interior. Taglio gets that balance right. And as it is Detroit style, there is a nicely caramelized cheese perimeter (where the well done cheese melts against the pan and melds into the edge of the crust). The crust is substantial enough to carry everything but it still eats lighter than its thickness suggests (Some Detroit-style pizzas look impressive on Instagram but are squashed under their own weight - Not so here). Even beneath a profound pile of toppings, the crust remains crisp, structured, and airy. Recommended.
